| RECOMMENDED - Decanter World Wine Awards 2010 Straw yellow with greenish hues. The nose has a very delicate scent of green apples, rich in citrus fruit notes and a vegetable scent. On the palate it is soft. Aromatic with a fresh acidity, very fine ensuring the persistence of its taste. Founded in 1868 by the famed oenologist Antonio Carpenè Malvolti in Veneto, Italy, the company has been a noteworthy contributor to the history and study of Prosecco and is now run by the fourth generation of great sparkling wine makers. Grapes for the Prosecco di Conegliano are selected only from hillside vineyards in the DOC area Grapes: 100% Prosecco Soil: Layers of flaky rich soil, limestone marl, and grey-green chalk. Winemaking: The grapes are immediately taken to the winery where they are de-stalked and then gently pressed. The must obtained ferments in stainless steel tanks at a controlled temperature of no more than 18-20°C. It is then re-fermented, again at controlled temperatures, in pressurised tanks. Local yeasts are used for the 'prise de mousse'. When the sparkling wine is obtained, it is centrifuged before bottling under vacuum. Colour: Brilliant, straw-yellow. Taste: A very fine and fruity bouquet. The palate is full yet delicate with fine and continuous bubbles yielding a characteristic sensation of liveliness and elegance. The finish is fresh and appealing. Serve: Ideal as an aperitif and excellent with fish dishes and throughout the meal.
