| Puglia, the heel of the Italy boot is a long flat region with prolific production of wine and table grapes as well as olive oil and is an important agricultural region. The finest wines of Puglia are produced in the Salento peninsula where the soil is red on a calcareous base. Though the climate is hot, it is not torrid, thanks to the cooling influence of breezes coming off the Adriatic and Ionian seas. Cantina Terre di Sava was established in 2008 by a group of wine lovers who joined forces to rescue a treasured winery from financial difficulties. The investors knew the heritage and potential of this unique land and were able to capitalize on the best aspects of the terroir, climate and unfaltering human Endeavour to produce wonderful wines. The village of Sava is at the centre of the Primitivo di Manduria DOC, an area renowned for the production of exceptional fruit driven reds made from the indigenous Primitivo grape. Grapes: 100% Primitivo Vines / Ha: 5,000 plants Harvest: Middle to end of August Soil: Mainly clay Winemaking: Temperature controlled maceration followed by draining and soft pressing at the end of the alcoholic fermentation. Maturation: In stainless steel tanks. The wine sees no wood ageing. Serve: At 18C to accompany red meats, savoury dishes, game and mature cheese. Colour: Deep ruby red with violet tinges.
