| This Ruby-red wine with garnet highlights has a delicate bouquet reminiscent of violets. The Palate is showing ripe fruit flavours of black cherries as well as smoke and tobacco culminating in an enjoyable finish. San Silvestro produce excellent quality, typical and keenly priced Piemontese wines from their own grapes grown on their own estates in Italy. Grapes: 100% Nebbiolo grapes from hillside vineyards around the town of Alba Training: Low Guyot. Vinification: The grapes were de-stemmed and crushed. Fermentation took place in temperature controlled stainless steel tanks at 28-30C with maceration on skins lasting 10 days. The traditional pumping over of the cap to delicately extract substances and tannins. Took place. Ageing: 12 months in medium sized Slavonian oak cask Colour: Deep ruby red with orange tinges that tend towards brick with age.
