Grapes: Nerello Mascalese and Sangiovese Soil: Clay &-limestone Age: 10-15 years old Viticulture: Vines are trained on trellis. Pruning in the Guyot style. Harvest: Early to mid September by hand. Winemaking: Grapes are lightly crushed using horizontal presses. Maceration lasts for 6 hours. Temperature controlled fermentation in stainless steel vats lasting 20 days. Serve: Chilled with hors d'oeuvres, chicken, fish and seafood dishes.
