| For more than 100 years the Delaunay family has produced and also acted as “négociant éleveurs" in Burgundy. Catherine and Laurent Delaunay, fourth generation of the family involved in wine, founded their own company “Badet Clément & Cie”. With the aid of their family they decided to bring their experience and expertise as winemakers in Burgundy to this exciting area of the Languedoc region of southern France. Here they have created wines that express flair and individuality of the region. Grapes: 50% Ugni Blanc, 40% Colombard and 10% Sauvignon Blanc Region: Appellation area of Vin de Pays de Comté Tolosan near Toulouse, South-West France. Soil: Limestone. Climate: Hot Mediterranean with Atlantic influences (cold & humid nights) Winemaking: The grapes were machine harvested and Carbonic Snow was put on the freshly cut grapes to avoid oxidation. Fermentation took place in temperature controlled stainless steel tanks at a low temperature directly after pressing. No malolactic fermentation took place. Particular attention is paid to prevent the wine from oxidation. The wine was kept on its lees in order to emphasise the natural freshness of the wine. Colour: Pale yellow. Taste: Fruity nose of citrus and passion fruit, this delicious white wine has lovely fresh aromatics and a clean, well balanced freshness.
